Crunchy Vegan Granola

Looking to spice up your breakfasts? Our Crunchy Vegan Granola is the perfect dish for you! Bake up on the weekend in under 20 minutes and have all your breakfasts ready for the week! Needing to go nut free? Simply swap the nuts for seeds such as pepitas, sunflower seeds, hemp seeds or chia seeds. Use the crunchy vegan granola with coconut yoghurt and fresh fruit or soy milk.

Crunchy Vegan Granola

Ingredients

  • 1/2 cup brazil nuts

  • 1/2 cup almonds

  • 1/2 cup cashews

  • 1/2 cup pepitas

  • 1 cup rolled oats

  • 1/2 cup shredded coconuts

  • 1/2 cup agave nectar

  • 1/4 cup coconut oil

  • 2 tsp cinnamon

  • 1 tsp garam masala

 

Method

  1. Preheat oven to 180 degrees Celsius

  2. In a small bowl mix spices with melted coconut oil, ensuring a smooth consistency

  3. In a large bowl mix together nuts, oats and shredded coconut

  4. Drizzle coconut oil and spices throughout mixture and stir well

  5. Line tray with baking paper and evenly spread mixture

  7. Place tray in oven and cook for 10 minutes

  8. Stir mixture and cook for a further 10 minutes

  9. Remove from oven and drizzle mixture with agave syrup

  10. Allow to cool and serve with fruit and yoghurt
