Easy Vegan Spaghetti Bolognese

Spaghetti Bolognese is a dish that almost everyone has eaten at least once, or has as a regular family staple! This easy vegan spaghetti bolognese dish takes a twist on the traditional mince containing spaghetti bolognese. It’s great for everyone – from vegans, to those just wanting to add an extra meat-free meal into their week. In this dish I used the Naturli Vegan Mince, but could also work with Veggie Delight Vegan Mince or even something simple like Textured Vegetable Protein!

Easy Vegan Spaghetti Bolognese

Serves: 4

Time: 20 minutes

Ingredients:

  • 1 tbsp olive oil

  • 1 large onion, chopped

  • 3 cloves of garlic, crushed

  • 4 medium zucchini

  • 400g vegan mince

  • 3 x 400g tins of chopped tomatoes

  • 2 tbsp tomato paste

 

Method:

    1. Fry the onion and garlic in the oil until soft.

    2. Add the vegan mince and fry for a further 5-10 minutes on medium heat, stirring constantly.

    3. Add the tomato paste and tinned tomatoes, stir well and simmer for 10 minutes over a low heat.

    4. Meanwhile, using a spiralizer, spiralizer 4 zuccinis and place them in four bowls.

  1. Serve bolognese sauce on a bed of zucchini and garnish with grated dairy-free cheese or nutritional flakes and top with fresh herbs.
