I absolutely love salad! This recipes was actually my very first time using Fennel and wow, what a flavour! I absolutely love the combination of the sweet apple, with the anaseed flavour of the Fennel and the crunchiness of the whole dish! Topped off with an absolutely delicious, refreshing dressing!
Yellow capsicum, finely sliced
½ Red cabbage, finely sliced
2 carrots, grated
1 green apple, finely sliced
1 Fennel core, finely sliced
2 tbsp. apple cider vinegar
3 tbsp olive oil
1 tbsp poppy seeds
2 tbsp Dijon mustard
Finely slice yellow capsicum, red cabbage, apple and fennel core, grate two carrots.
Mix all ingredients together in a large bowl.
In a separate bowl whisk together apple cider vinegar, olive oil, poppy seeds and Dijon mustard.
Drizzle dressing over salad mix and massage to ensure the dressing coats all ingredients
Split amongst two plates and top with fennel fronds and serve immediately.
