Easy Vegan Spaghetti Bolognese (with vegan mince and zoodles!)

Serves 4
  • 1 tbsp olive oil

  • 1 large onion, chopped

  • 3 cloves of garlic, crushed

  • 4 medium zucchini

  • 400g vegan mince

  • 3 x 400g tins of chopped tomatoes

  • 2 tbsp tomato paste

  1. Fry the onion and garlic in the oil until soft.

  2. Add the vegan mince and fry for a further 5-10 minutes on medium heat, stirring constantly.

  3. Add the tomato paste and tinned tomatoes, stir well and simmer for 10 minutes over a low heat.

  4. Meanwhile, using a spiralizer, spiralizer 4 zuccinis and place them in four bowls.

  5. Serve bolognese sauce on a bed of zucchini and garnish with grated dairy-free cheese or nutritional flakes and top with fresh herbs.
