Easy Vegan Spaghetti Bolognese (with vegan mince and zoodles!)

Serves 4
Ingredients:
1 tbsp olive oil
1 large onion, chopped
3 cloves of garlic, crushed
4 medium zucchini
400g vegan mince
3 x 400g tins of chopped tomatoes
2 tbsp tomato paste
Method:
Fry the onion and garlic in the oil until soft.
Add the vegan mince and fry for a further 5-10 minutes on medium heat, stirring constantly.
Add the tomato paste and tinned tomatoes, stir well and simmer for 10 minutes over a low heat.
Meanwhile, using a spiralizer, spiralizer 4 zuccinis and place them in four bowls.
Serve bolognese sauce on a bed of zucchini and garnish with grated dairy-free cheese or nutritional flakes and top with fresh herbs.
